This is my favourite Christmas cake but to be honest I could eat it all year round. :) It's very easy to make too. There are many different recipes for date cake but this is the recipe my mom always uses and in my opinion it's the best one.

Ingredients

Metric Cups
  • 300 millilitres milk
  • 200 grams dried dates
  • 200 grams butter
  • 3 eggs
  • 300 millilitres sugar
  • 675 millilitres cake flour
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla sugar
  • 10½ fluid ounces milk
  • 7 ounces dried dates
  • 7 ounces butter
  • 3 eggs
  • 10½ fluid ounces sugar
  • 23⅔ fluid ounces cake flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla sugar

Method

  • Put the dates and the milk into a casserole and heat until the dates soften a bit then take off the heat.
  • Add the butter and let it melt then add the sugar. Let the mixture cool.
  • Add the eggs one by one into the cool mixture whisking very well.
  • Then add the dry ingredients that you've mixed in another bowl first.
  • Pour the batter into a well greased (or silicone) bundt cake tin (2 litres) and bake at 175 C for about 1 hour or until a tester comes out clean.
