This recipe was published in Helsingin Sanomat, our biggest newspaper. They have a weekly food section every Thursday and most of the recipe are quite good and interesting. This is the best lemon meringue pie I've ever had. :)

Ingredients

Serves: 4-6

Metric Cups

For the Lemon Filling

  • 300 millilitres water
  • 3 egg yolks
  • 100 grams sugar
  • 1 tablespoon butter
  • 4 tablespoons cornflour
  • ½ lemon (zest of)
  • 1 lemon (juice of)

For the Meringue

  • 3 egg whites
  • 6 tablespoons sugar

For the Lemon Filling

  • 10½ fluid ounces water
  • 3 egg yolks
  • 4 ounces sugar
  • 1 tablespoon butter
  • 4 tablespoons cornstarch
  • ½ lemon (zest of)
  • 1 lemon (juice of)

For the Meringue

  • 3 egg whites
  • 6 tablespoons sugar

Method

My Favourite Lemon Meringue Pie is a community recipe submitted by Kukka and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Rub the butter and flour with your fingers, add water and mix.
  • Put the dough into a shallow pie dish. Prick some holes into it with a fork and bake it at 225 C for about 15 mins until it's brownish.
  • Mix all the ingredients for the filling in a pan, keep mixing and let it come to a boil.
  • Pour the filling on the crust.
  • Beat the egg whites until hard and then add the sugar gradually.
  • Spread on top of the filling.
  • Bake the pie for about 5 mins, until the meringue gets some colour. Serve cooled.
