Beef Skewers With Horseradish Dip

Cut the beef into 2.5cm cubes, and put into a freezer bag with all of the other ingredients. Leave overnight in the fridge. Let the meat come to room temperature, and soak about 10 bamboo skewers in water for about half an hour. Heat a grill or griddle, then thread three or four pieces of meat onto each skewer and slap on the heat. Cook the skewers for about 3 minutes a side, or to taste. To make the dip, whisk together all of the ingredients, and put into a bowl to serve with the beef skewers.

- 1½ tablespoons red wine vinegar (or balsamic)
- 2 tablespoons horseradish sauce
- 1 tablespoon fresh rosemary (finely chopped)
- 60 millilitres olive oil
- 2 tablespoons Worcestershire sauce
- 2 tablespoons port
For the Horseradish Dip
- 200 millilitres creme fraiche
- 4 tablespoons horseradish sauce
- 1 tablespoon Dijon mustard
For the Beef Skewers
- 17⅔ ounces beef rump
- 1½ tablespoons red wine vinegar (or balsamic)
- 2 tablespoons horseradish sauce
- 1 tablespoon fresh rosemary (finely chopped)
- 2 fluid ounces olive oil
- 2 tablespoons Worcestershire sauce
- 2 tablespoons port
For the Horseradish Dip
- 7 fluid ounces creme fraiche
- 4 tablespoons horseradish sauce
- 1 tablespoon dijon mustard
