Soda Danish Pastries

crumb the flour and butter together and then add the sugar and enough buttermilk to make it stiff. Then roll out to a rectangle shape. Mix the filling ingredients together and spread over the dough. Scatter over a handful of golden raisins and then roll up the rectangle like a Swiss roll. Chop into slices and bake in a pre-heated oven (190oC) for 15-20 mins. When cold drizzle with icing and sprinkle on some more cinnamon to make them look more Danish.
Introduction
These are really easy to make and very different from you run of the mill stodgy scones but very delicious.

For the Dough
- 16 ounces soda bread flour
- 2 ounces butter
- 2 ounces sugar
- 2 ounces butter
For the Filling
- 5 tablespoons buttermilk (approximately, no more)
- 4 ounces soft brown sugar
- 2 teaspoons cinnamon
- 1 handful golden raisins
