Hot Chocolate Puddings

Heat the oven to 200c/400F/Gas 6 Melt chocolate over a pan of simmering water, stir in cream and chill in the fridge for 20-30 minutes. Grease 4 individual pudding moulds with butter. Beat together sugar and butter, then add the eggs gradually. Sift in the flour, cocoa powder, and ground almonds and mix. Half fill the pudding moulds with the mixture, then make a "well" in the middle of the mixture. Put 1 teaspoon of the chilled chocolate in the well and top with remaining pudding mixture. Bake for 10-15 mins. Serve with cream or ice cream.

I top my puddings with a few Minstrels and some icing sugar dusted over. There is usually A LOT of chocolate filling left over which could be used to ice a few cupcakes!
