cut up all of the vegetables and chillies and add to stock. place on boil for about 45 mins or until soft. leave to simmer for 1 hour. cook off bacon and chop finely. blend vegetable with the mint and peas. warm through ingredients. serve with bacon and crème fraiche. lovely hearty soup.

- 2 onions
- 4 cloves garlic
- 2 sticks celery
- 4 large potatoes
- 1 carrot
- 2 litres vegetable stock (use less if necessary)
- 3 green chillies (or more if you like it hot!!)
- 8 leaves mint
- 1 tin mushy peas (make sure these have a lot of green colour to them - usually store brands are the best)
- smokey bacon (a few rashers)
- creme fraiche

- 3 green chiles (or more if you like it hot!!)
