Ingredients

Serves: 4

Metric Cups
  • 2 onions
  • 4 cloves garlic
  • 2 sticks celery
  • 4 large potatoes
  • 1 carrot
  • 2 litres vegetable stock (use less if necessary)
  • 3 green chillies (or more if you like it hot!!)
  • 8 leaves mint
  • 1 tin mushy peas (make sure these have a lot of green colour to them - usually store brands are the best)
  • smokey bacon (a few rashers)
  • creme fraiche
  • 2 onions

  • 3½ pints vegetable broth (use less if necessary)
  • 3 green chiles (or more if you like it hot!!)
  • 8 leaves mint
  • 1 tin mushy peas (make sure these have a lot of green colour to them - usually store brands are the best)

  • creme fraiche

  • cut up all of the vegetables and chillies and add to stock. place on boil for about 45 mins or until soft. leave to simmer for 1 hour.
  • cook off bacon and chop finely.
  • blend vegetable with the mint and peas.
  • warm through ingredients.
  • serve with bacon and crème fraiche. lovely hearty soup.
