  • 250 grams caster sugar
  • 250 grams plain flour
  • 2 teaspoons baking powder
  • 125 grams unsalted cashew nuts (or mixed nuts)
  • 125 grams sultanas
  • 1 lemon (zest grated)
  • 2 eggs
  • 9 ounces superfine sugar
  • 9 ounces all-purpose flour
  • 2 teaspoons baking powder
  • 4 ounces unsalted cashew nuts (or mixed nuts)
  • 4 ounces golden raisins
  • 1 lemon (zest grated)
  • 2 eggs

Method

  • Preheat oven at 350f/180c/fan 160c/gas 4 for 15 to 20 minutes
  • You will need 2 lined baking trays
  • Put the sugar, flour, baking powder, nuts, fruit, grated zest into a large bowl and mix together
  • Add the 2 eggs and mix
  • If there is still a lot of loose flour, add another egg or a little milk
  • With just enough flour on your hands and worktop, place the mix onto the worktop and mould into 2 long rolls
  • Move them carefully onto one baking tray so they are side by side
  • Flatten the top of the rolls slightly
  • Bake and then let them cool down
  • Slice on the diagonal and place back on the two trays cut side up
  • Turn the oven down to 275f/140c/fan 120c and cook the Biscotti for 5 to 10 minutes
  • Turn the slices over and bake on the other side for another 5-10 minutes
  • Store in an air tight container
