Strawberry and Limoncello Tiramisu

Put eggs and sugar in bowl and whisk until thick, creamy and almost pale yellow. Whisk in mascarpone until smooth. Hull and dice half the strawberries. Combine water and limoncello in a bowl, dip biscuits one at a time and arrange in base of serving dish. Cover with half mascarpone mix, then diced strawberries. Repeat with another layer of dipped savoiardi. Top with a smooth layer of mascarpone mix. Chill for 5-6 hours or overnight. Decorate with remaining strawberries before serving. Serves 6
Introduction
A nice variation on the classic, make your own Limoncello, it is really easy and makes a great gift with a few recipes on how to use it (personally, mine tends to end up over ice and drunk as is!!!)

- 2 eggs
- ¼ cup superfine sugar
- 9 ounces mascarpone cheese
- 2 punnets strawberries
- ½ cup limoncello
- ½ cup cold water
- 7 ounces savoiardi cookies (Italian sponge fingers - I often substitute with store bought Madeira cake or sponge)
