Melt butter, when bubbling add pork and lightly pan fry in two batches. Cook for 1-2 mins on each side. Sprinkle with the lime juice and set aside and keep warm To pan add wine, bring to boil and allow to reduce. thicken with arrowroot if desired. then add the pork to the pan and serve. Suggests to serve with sweet potato puree and beans.

- 2 ounces butter
- ¼ cup lime juice
- ½ cup white wine
