I came over this recipe in a danish magazine and I just had to try it being really sick and tired of eating stale bread. After making it i just simply couldn`t stop eating it tasted soo good!

Metric Cups
  • 300 millilitres water (cold)
  • 20 grams fresh yeast
  • 1 teaspoon salt
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • 500 grams wholewheat flour
  • 10½ fluid ounces water (cold)
  • 1 ounce fresh yeast
  • 1 teaspoon salt
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • 18 ounces wholewheat flour

Method

  • Stir the fresh yeast out in the cold water, add the honey and the olive oil and the salt.
  • Stir the wheat flour together with the other ingredients until the dough is soft and .. Knead the dough on the table for 10 min and the let the dough raise for 2 -2.5 hours under a damp kitchen cloth.
  • Pound the dough and mould it into one bread. Let the bread raise again for 15 min.
  • And afterwards swab it with water and bake the bread in the oven for 30 min on 200 degrees Celsius .
  • Turn off the oven and turn the bread so that its lays on its head (...why I don`t know!!) and let it bake another 5 min in the afterheat of the oven
