Plum Crumble

Preheat oven 180c. Pop plums cut side down into well buttered dish, sprinkled with ginger. Place butter, 100gms brown sugar, oats, flour, vanilla & food process on pulse till clumped pop dough over plums (make sure some of the plums are showing) Bake for 35mins till bubbling – sprinkle on sugar & nuts over & bake for another 15 mins. (Variation - I put mixed nuts in crumble and process) Serve with Custard or ice cream, & milk.

- 2 tablespoons crystallised ginger (chopped - I have substituted with some ground ginger, 1 teaspoon)
- 125 grams butter (softened)
- 100 grams brown sugar
- 2 tablespoons brown sugar (extra)
- 60 grams rolled oats
- 120 grams flour
- 1 teaspoon vanilla essence
- 188 millilitres pinenuts (or flaked almonds)

- 2 tablespoons candied stem ginger (chopped - I have substituted with some ground ginger, 1 teaspoon)
- 4⅖ ounces butter (softened)
- 3½ ounces brown sugar
- 2 tablespoons brown sugar (extra)
- 2⅛ ounces quick-cooking oats
- 4¼ ounces flour
- 1 teaspoon vanilla essence
- 7 fluid ounces pinenuts (or flaked almonds)
