Zucchini Slice

Introduction

Lovely way to get veggies into the kiddies, great with tomato sauce, good for picnics & great toddler finger food.

Ingredients

Serves: -

  • 13 ounces zucchini
  • 1 large finely chopped onion
  • 3 rashers finely chopped bacon
  • 1 cup grated Cheddar cheese
  • 1 cup self-rising flour
  • ½ cup oil
  • 5 lightly beaten eggs
  • salt to taste
  • pepper to taste

  • Preheat oven 180c.
  • Grate unpeeled zucchini coarsely, combine with onion, bacon, cheese, sifted flour, oil & eggs.
  • Season with salt & pepper.
  • Pour into lined (or greased) half size roasting pan or rectangle glass dish.
  • Bake in moderate oven 180c 30 to 40 minutes or until browned. ( I sometimes add a grated carrot.)
