Sneaky Six Veg Red Pasta Sauce

Chop all the vegetables (doesn't have to be really small) and fry for about 5-10 mins in olive oil until beginning to soften. Add the tinned tomatoes and fry for another couple of mins then add the passata and herbs.Cover and simmer for at least half an hour - more if possible. Stir occasionally. When the veg if softened, especially the carrots take off the heat and blend ( I use a stick mixer as I haven't got anything else but probably a food processor is better) until smooth.

Introduction
A pasta sauce which is great for getting 6 kinds of veg into kids with their favourite pasta. Its blended smooth so they will never know whats in it. Makes 2 batches to feed 4 so you can freeze half but you do need a big pan.

- 1 yellow pepper (or orange)

- 1 teaspoon fresh basil (or thyme)
