Parma Ham Bake

Bring a pan of water to boil and add dried Gnocchi. Wait for the dumplings to rise to the surface of the water and then turn heat off and drain. Set aside. Melt butter and onion in heavy based saucepan. Add onion and garlic and sauté until translucent. Add tinned tomatoes and 3 tbsp of sun-dried tomato paste and fresh tarragon. Let simmer for 5 mins or so and then add tub of mascarpone cheese.Stir until cheese has melted and you a salmon pink emulsion. Add fresh breadcrumbs and combine. Add gnocchi and mix until equally distributed through the mixture. Pour the mixture into a rectangular oven dish and place the slices of Parma ham over the top. Place slices of mozzarella over the top of the ham and place in a hot oven for about 30 - 40 mins or until the cheese is melted and bubbling/golden. Serve with garlic bread and Italian salad leaves.
Introduction
A wonderful dish using Italian potato Gnocchi, Mascarpone cheese, sun-dried tomatoes and Parma ham. One of our favourite dishes. Great served with home made garlic bread and Italian salad leaves.

- 1 onion (finely chopped)
- 4 cloves garlic (finely chopped and crushed - or however much or as little as you like)
- butter (for sautéing garlic and onion)
- oil (for sautéing garlic and onion)
- 1 tin chopped tomatoes
- 3 tablespoons sun-dried tomato paste
- fresh tarragon (fresh, or more or less if you prefer)
- 1 tub mascarpone cheese
- white breadcrumbs (fresh, about 4 rounds of bread)
- 1 packet gnocchi
- 5 slices parma ham
- mozzarella (for the topping)
