- 300 grams dark chocolate (good quality)
- 500 millilitres double cream
- 3 egg whites
- 18 ounces superfine sugar
- 11 ounces bittersweet chocolate (good quality)
- 17½ fluid ounces heavy cream
- 3 egg whites

if you dont like dark chocolate, replace with milk or white and reduce the sugar to around 200g or less, depending how sweet the chocolate is. Always use the best quality chocolate, cheap supermarket brand tends to have a slightly off after taste in the recipe.
