Metric Cups
  • 500 grams caster sugar
  • 300 grams dark chocolate (good quality)
  • 500 millilitres double cream
  • 3 egg whites
  • 18 ounces superfine sugar
  • 11 ounces bittersweet chocolate (good quality)
  • 17½ fluid ounces heavy cream
  • 3 egg whites

  • Melt the chocolate over a pan of hot water.
  • whisk the egg whites untill stiff.
  • add the sugar gradually untill white and shiny.
  • whisk cream and add chocolate. mix.
  • add to egg and sugar mixture. fold it.
  • refrigerate for at least an hour.

    if you dont like dark chocolate, replace with milk or white and reduce the sugar to around 200g or less, depending how sweet the chocolate is. Always use the best quality chocolate, cheap supermarket brand tends to have a slightly off after taste in the recipe.
