Lemon Tiramisu

Introduction

It is not really a tiramisu as such...just used the basic principles of it.

Ingredients

Metric Cups

For the Mascarpone Mix

  • 250 grams mascarpone cheese
  • 3 medium egg whites (whisked til stiff)
  • 3 medium egg yolks
  • 50 grams sugar (beaten with egg yolks)
  • lemon curd
  • gram sponge fingers (lady finger biscuits or boudoir biscuits)

For the Syrup

  • 2 teaspoons lemon juice
  • 25 grams sugar (boiled with lemon juice)

For the Mascarpone Mix

  • 9 ounces mascarpone cheese
  • 3 medium egg whites (whisked til stiff)
  • 3 medium egg yolks
  • 2 ounces sugar (beaten with egg yolks)
  • lemon curd
  • gram lady fingers or savoiardi (lady finger biscuits or boudoir biscuits)

For the Syrup

  • 2 teaspoons lemon juice
  • 1 ounce sugar (boiled with lemon juice)

Method

Lemon Tiramisu is a community recipe submitted by loulou73 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Whisk the whites and put to the side
  • Whisk the yolks and sugar until colourless and then add the mascarpone cheese and blend together well.
  • Slowly fold in the whites to the yolk mix
  • Dip the sponge fingers into the syrup (soak) and place in the bottom of the dish (small glasses or larger glass bowl)
  • Add a layer of the mascarpone mix and then a layer of the Lemon Curd. Keep layering the mascarpone mix and the Lemon Curd until you reach the top
  • refrigerate until needed. (Always best to do the day before needed.) ET VOILA!!!!!
