Whisk the whites and put to the side Whisk the yolks and sugar until colourless and then add the mascarpone cheese and blend together well. Slowly fold in the whites to the yolk mix Dip the sponge fingers into the syrup (soak) and place in the bottom of the dish (small glasses or larger glass bowl) Add a layer of the mascarpone mix and then a layer of the Lemon Curd. Keep layering the mascarpone mix and the Lemon Curd until you reach the top refrigerate until needed. (Always best to do the day before needed.) ET VOILA!!!!!

- 250 grams mascarpone cheese
- 3 medium egg whites (whisked til stiff)
- 3 medium egg yolks
- 50 grams sugar (beaten with egg yolks)
- lemon curd
- gram sponge finger (lady finger biscuits or boudoir biscuits)
For the Syrup
- 2 teaspoons lemon juice
- 25 grams sugar (boiled with lemon juice)
For the Mascarpone Mix
- 9 ounces mascarpone cheese
- 3 medium egg whites (whisked til stiff)
- 3 medium egg yolks
- 2 ounces sugar (beaten with egg yolks)
- lemon curd
- gram lady finger (lady finger biscuits or boudoir biscuits)
For the Syrup
- 2 teaspoons lemon juice
- 1 ounce sugar (boiled with lemon juice)
