Cook penne pasta peel, and halve lengthwise the red onion and slice thinly, gently brown in olive oil cut the chicken tenderloins into chunks, cook with onion for 2-3 mins add a sploosh of the wine or rum, cook for a further 1 minute, turn heat down add cream, salt & pepper then lastly add avocado, careful not to boil
