Chocolate Puddings With White Chocolate Middles

Preheat oven to 180c/gas mark 4 Melt chocolate in a bainmarie. Brush 6 x ramekins with melted butter, tip in ground hazelnuts then shake excess back into a bowl. Beat softened butter and sugar in a large bowl until light and fluffy. Add melted chocolate and mix well. Add egg yolks one at a time, beating well each time. Sift in the flour, baking powder, and ground hazlenuts. In another bowl, whisk egg white until they form stiff peaks. Stir 2 tablespoons or so egg white into the chocolate mixture, then carefully fold in the rest. Divide three quarters of the mixture into the ramekins. Push three chocolate squares into each ramekin dish, and spoon an equal amount of the rest of the chocolate mixture over the top of each ramekin. Bake on a baking sheet for 15 minutes.
