Nostalgic Apple Pudding

Introduction

This time of year I miss my Nana, but this helps me remember her - and what I might imagine as simpler times. I can be idealistic, can't I?

Ingredients

Serves: 4

For the Pudding

  • 2 tablespoons butter
  • ½ cup sugar
  • ½ cup flour
  • 2 tablespoons flour (extra)
  • ½ cup cold milk
  • 6 apples

For the White Sauce

  • 2 cups cold milk
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 2 teaspoons cornstarch (mixed with a bit of water to make a paste)

Pudding

  • Cream the butter and sugar together until fluffy, then add the flour and mix Add milk and mix.
  • Then, slice apples and toss into buttered pie dish, sprinkle with a bit of sugar.
  • Pour pudding mixture over apples and bake for about 15-20mins at 375.
  • Meanwhile for the white sauce (a crucial component)

  • heat the milk, sugar and vanilla in a pot on the hob and bring to a slight bubble.
  • Add the corn starch paste to thicken up.
  • When bubbling, turn it down to a slight simmer. Keep whisking every now and again.
  • When the pudding is done, dish out and pour over white sauce. This is like a hug from your Nana in a bowl.
  • Additional Information

    This is an austere, war time recipe from the 30's. It reminds me of a time when the art of domesticity was considered an art and knowledge was passed down through the generations. My Nana, Thelma, was magnificent and so I proudly share this with you. Although, she sometimes altered this a bit and added some chocolate chips, it is great on its own.The white sauce does make this dish. You can alter the sugar to personal taste, if you like. I would think a splash of Kahlua might be lovely too.
