Ingredients

Serves: 3-4

Metric Cups
  • 1 large onion
  • 2 green peppers
  • 3 tomatoes
  • oil
  • 1 pinch of salt
  • 1 pinch of pepper
  • 5 medium eggs

Method

  • Cut the onions in small pieces.
  • Cut the peppers and tomatoes in sticks.
  • Heat some oil in a pan and add the onion. Fry it until light brown and add the peppers and tomatoes. Salt lightly and add some ground pepper and stew it under lid.
  • When it's soft, stir 5 eggs, pour on the vegetables and stir like scrambled eggs.
  • Serve with white bread. (You can peel the potatoes if you want and you can leave out the eggs, it's good that way too.)
