Cream together fats. Beat in sugars until mixture is fluffy. Add eggs, one at a time, until well beaten. Sift in salt, soda and 2 cups of flour; beat with mixer. Add remaining flour in batches, stirring with a wooden spoon. Fold in chopped chocolate. Using a small ice cream scoop, spoon dough onto lined baking sheets. Bake at 350 degrees for no more than 11 minutes. Cool slightly before removing from pans.
Introduction
This recipe makes a huge batch of cookies. I roll it into four logs, wrap in parchment paper, and freeze. Let it soften slighty then slice and bake. These really are great cookies!

- 1½ cups soft light brown sugar
- 1⅓ cups granulated sugar
- 5 medium eggs
- 1½ teaspoons salt
- 1½ teaspoons baking soda
- 7 cups sifted cake flour
- 24 ounces chopped chocolate

These are the best chocolate chip cookies - they bake up perfectly golden every time - no spreading, no burnt edges and no raw cookie dough. I freeze them in small logs that will yield about 12 cookies or enough that will fit on one pan. Using these freezer dough cookies mean I only bake a few cookies at a time rather than a giant batch. So we can easily limit our consumption. Love this recipe!
