The World's Best Mojito

Heat 100 g sugar and 100 ml water in a small saucepan over low heat, stirring to dissolve the sugar. Increase the heat and simmer until syrupy. Cool and chill. Put 6 quartered limes in a bowl. Add 6 tablespoons of the sugar syrup and 12 mint sprigs. Using the end of a rolling pin, 'muddle' or squash the limes to extract the juices and oils. Divide between 6 glasses. Crush plenty of ice and add some to each glass. Pour 30ml rum into each glass and top with soda water. Add a mint sprig to each glass to serve.
