Ingredients

Serves: 6

Metric Cups
  • 100 grams sugar
  • 100 grams water
  • 6 limes
  • mint (sprigs)
  • rum
  • 3½ ounces sugar
  • 3½ ounces water
  • 6 limes
  • mint (sprigs)
  • rum

Method

  • Heat 100 g sugar and 100 ml water in a small saucepan over low heat, stirring to dissolve the sugar. Increase the heat and simmer until syrupy. Cool and chill.
  • Put 6 quartered limes in a bowl. Add 6 tablespoons of the sugar syrup and 12 mint sprigs.
  • Using the end of a rolling pin, 'muddle' or squash the limes to extract the juices and oils.
  • Divide between 6 glasses.
  • Crush plenty of ice and add some to each glass.
  • Pour 30ml rum into each glass and top with soda water. Add a mint sprig to each glass to serve.
