Ingredients

Serves: depends on size you cut

Metric Cups
  • 1 packet marie biscuits
  • 100 millilitres sugar
  • 250 grams chopped dried dates
  • 115 grams butter
  • 1 egg (whisked)
  • 1 teaspoon vanilla essence (or brandy)
  • 4 tablespoons cherries (soaked in brandy and chopped)
  • 63 millilitres walnuts (chopped)
  • desiccated coconut (to coat the square)
  • 1 packet marie biscuits
  • 3½ fluid ounces sugar
  • 9 ounces chopped dried dates
  • 4 ounces butter
  • 1 egg (whisked)
  • 1 teaspoon vanilla essence (or brandy)
  • 4 tablespoons cherries (soaked in brandy and chopped)
  • 2⅕ fluid ounces walnuts (chopped)
  • unsweetened shredded coconut (to coat the square)

Method

  • Crush the biscuits - not too finely - the pieces should be about the size of a penny.
  • Melt the butter and add the sugar. Stir till disolved. Add the dates and simmer the mixture until it is soft and squishy. Take it off the heat and let it cool down.
  • If you're adding the cherries, do so now.
  • Add the whisked egg and vanilla or brandy and mix well. Add the crushed biscuits and mix.
  • Spread the mixture into a lined tin. Place in the fridge for an hour or so and then cut into small squares. If you choose to - cover the squares in coconut. This also stops them sticking together.
