Megan's Mango Salsa

Introduction

This is my favorite salsa to serve with grilled fish - the mango and jalapeno give it a nice zip!

Ingredients

Serves: 4

  • 2 cups diced mangos
  • 2 cups diced cucumber
  • 1 jalapeno peppers (seeded and sliced)
  • ½ cup chopped fresh mint
  • ½ cup lime juice
  • 1 tablespoon soft brown sugar
  • 2 teaspoons grated fresh gingerroot

  • Put the mango, cucumber, jalapeno and mint in a bowl.
  • In a second bowl, mix together the lime juice, brown sugar, and ginger.
  • Pour over the mango mixture, and mix well.
  • Serve with fish or chicken.
  • Note: This can be made up to 4 hours prior to serving - the flavours meld together over time.
