Ingredients

Serves: 4

Metric Cups
  • 300 grams brown rice
  • 4 medium avocados (just starting to get ripe)
  • 4 salmon fillets
  • 2 tablespoons thai fish sauce (nam pla)
  • 1 tablespoon teriyaki sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons sweet chilli sauce
  • ½ teaspoon honey
  • 1 teaspoon Dijon mustard
  • 10⅗ ounces brown rice
  • 4 medium avocados (just starting to get ripe)
  • 4 salmon fillets
  • 2 tablespoons thai fish sauce (nam pla)
  • 1 tablespoon teriyaki sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons sweet chile sauce
  • ½ teaspoon honey
  • 1 teaspoon dijon mustard

Method

  • Boil the rice according to the instructions.
  • In a bowl mix all the ingredients together, cover with cling film and leave.
  • Cut avocado into chunks, however small or big you would like, cover with clingfilm and leave in the fridge.
  • Place salmon on tray and grill both sides, I cook them for about 3 minutes each side, but it's up to you.
  • When the rice is ready add the mixture, avocados, and flake in the salmon, and serve! This really is a lovely dish, try it!
