Salmon, Avocado and Brown Rice

Boil the rice according to the instructions. In a bowl mix all the ingredients together, cover with cling film and leave. Cut avocado into chunks, however small or big you would like, cover with clingfilm and leave in the fridge. Place salmon on tray and grill both sides, I cook them for about 3 minutes each side, but it's up to you. When the rice is ready add the mixture, avocados, and flake in the salmon, and serve! This really is a lovely dish, try it!

- 10⅗ ounces brown rice
- 4 medium avocados (just starting to get ripe)
