Summer Rice Bowl

I'm not one for slaving in front of a stove, so I just microwaved the rice according to the box. Then I threw the kielbasa into a dry pan and let it fry for as long as the rice cooked. Then I dumped the kielbasa onto the rice and covered it so it would stay warm while I used the butter to saute the veggies and garlic for about 4-5 minutes in the same pan that I cooked the kielbasa in. I added seasonings to my liking like s little salt and some chilli powder. then I threw it all in with the rice, stirred it up, and voila!

A small, easy, but filling summer dish I threw together in an experiment one day.

Serves: 2
- 1 cup rice (instant)
- ¼ pound kielbasa (Polish sausage - cut into good-sized chunks)
- ¼ sliced onion
- 2 sliced scallions
- 5 sliced mushrooms
- ¼ sliced zucchini (into strips)
- 1 clove minced garlic
- 1 tablespoon butter
