Sausage, Potato and Onion Tortilla

Heat 1 tbs of the oil in the frying pan. Add the sausages and fry for 8.10 minutes, turning them frequently. Remove and set aside. Wipe out the pan with kitchen paper. Cut the onion in half and then into slivers lengthways. Heat 2 tbs of the oil in the pan. Add the potatoes, layering them with the onions. Cook for 10-15 minutes over medium-low eat, lifting and turning occasionally, until just tender. The potatoes and onions should not brown very much. Meanwhile, break the eggs into a large bowl, add seasoning and whisk briefly with a fork. Remove the potatoes and onions from the pan and add to the egg mixture. Thickly slice the sausages and mix with the eggs and potatoes. Return the pan to the heat, add the potato and egg mixture. Cook over medium-low heat until the bottom is golden brown and the top has almost set. Put a plate on top of the pan, invert it and slide back the tortilla into the pan. Cook for 2-3 minutes and serve hot or warm.
