Ingredients
Makes: 12 medium sized cupcakes
For the Batter
- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter (at room temperature)
- 1 cup granulated sugar
- 2 large eggs
- ½ cup milk (you can use 2% if you like)
- 1 teaspoon vanilla bean paste (or use one vanilla bean)
For the Icing
- ½ cup unsalted butter (at room temperature)
- 2 cups confectioners' sugar
- 1 teaspoon vanilla bean paste
- 3 tablespoons milk

- Cupcake batter: Preheat oven to 350 degrees F. Line cupcake pan with paper cupcake liners.
- In a medium bowl, sift flour, baking powder and salt; whisk together briefly to mix. Set aside.
- In a large bowl combine butter and sugar; cream together until mixture is light and fluffy.
- Add eggs and beat until well combined. In a small bowl stir the milk and vanilla paste or vanilla bean together. Alternately add the flour mixture, then the milk to the batter, beginning and ending with the flour mixture, mixing on low speed until combined.
- Spoon the batter into the liners, about 2/3 full. Bake cupcakes for around 20 mins (depends on your oven), until the cakes are pale golden and spring back when gently pressed on top.
- Cool in the pan for 5 mins then turn onto wire rack.
Icing
- In a medium bowl beat the butter until fluffy; add the sifted confectioners sugar and beat until smooth.
- Add vanilla paste and enough milk until icing is smooth and creamy (around 5 mins).
- Top cooled cupcakes with icing and decorate as desired.

Delicious and so easy! The double vanilla bean flavour made the cupcakes so moist and flavorsome - beautiful yummy soft cupcakes! I added a square of white chocolate in the centre to make it extra special :)
