I'm posting this because I really wanted to share it with everyone. I first came across this on a Kylie Kwong show (this is Kylie Kwong's recipe), and since I'm mad about Chinese food, I tried it out. Trust me, fried eggs never tasted so good before.

Ingredients

Serves: 1

Metric Cups
  • 4 eggs
  • 3 tablespoons peanut oil
  • 4 spring onions
  • 2 red chillies (finely chopped, seeded if you like)
  • white pepper
  • oyster sauce
  • 4 eggs
  • 3 tablespoons peanut oil
  • 4 scallions
  • 2 red chiles (finely chopped, seeded if you like)

Method

  • Heat the oil in a frying pan over medium-high heat, you need a bit of oil here, swirl and cover the entire pan.
  • Break the eggs in a bowl, keeping the yolk intact. Add the eggs to the pan, and let it fry for some time, till the white begins to turn golden brown at the edges. The eggs should be crispy at the bottom.
  • When the eggs are done, remove it onto a plate, srinkle white pepper powder, the spring onions, and chillies, and drizzle sparingly with oyster sauce.... and Enjoy!!
