Put a frying pan over slow flame. Dry roast all the ingredients till very aromatic. Take care not to burn them. Let them cool down. Now using a grinder, grind them all together to a powder. It will be slightly coarse. Store in an air-tight container, and use when needed.
Introduction
Somehow the store-bought garam masala don't appeal to me as much as the aroma of the freshly groung spices do. And many a times I don't get good authentic garam masala in the shops. I find it adultered by a lot of other spices like black pepper, cumin, coriander and such. So, when I need it, this s how I make it.

- 1 nutmeg
- 3 tablespoons green cardamom
- 2 tablespoons cloves
- 3 sticks cinnamon
- 2 black cardamom
- 1 mace (whole flower)
