Put oil in pan Cut big onions finely and add to hot oil Fry for about 5 mins then add salt/garlic and ginger and stir Brown for about 20 mins and add a little water if sticking Add meat and stir for about 5-7 mins Add chilli/spinach/coriander and stir for about 20 mins Add cumin powder and simmer for 5 mins

- 6 tablespoons vegetable oil
- 4 boneless chicken breasts
- 2 large onions
- 4 handfuls chopped spinach
- 1 bunch chopped cilantro
- 4 cloves crushed garlic
- 1 inch piece of fresh gingerroot (crushed)
- 1 teaspoon salt
- 4 tomatoes
- 1 green chile
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
