Introduction

Lovely indian dish - can be as mild or as spicy as you want it.

Ingredients

Serves: 3

  • 6 tablespoons vegetable oil
  • 4 boneless chicken breasts
  • 2 large onions
  • 4 handfuls chopped spinach
  • 1 bunch chopped cilantro
  • 4 cloves crushed garlic
  • 1 inch piece of fresh gingerroot (crushed)
  • 1 teaspoon salt
  • 4 tomatoes
  • 1 green chile
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin

  • Put oil in pan
  • Cut big onions finely and add to hot oil
  • Fry for about 5 mins then add salt/garlic and ginger and stir
  • Brown for about 20 mins and add a little water if sticking
  • Add meat and stir for about 5-7 mins
  • Add chilli/spinach/coriander and stir for about 20 mins
  • Add cumin powder and simmer for 5 mins
