Preheat oven to 175 degrees C/350 degrees F. In a mixing bowl beat together the eggs and vanilla (or lemon zest) until fluffy. In a separate bowl, beat softened butter (or margarine, if using) and sugar until white and fluffy. Add the egg mixture. Then mix in the flour, baking powder, baking soda and the unsweetened cocoa alternatively with the Pepsi (or Coke, if using), making the flour the last portion. Spoon mixture into an 8 or 9-inch round cake pan and place in preheated oven and bake for 45 minutes. Bon Appetit!
