Sift cake flour together with salt and baking powder. Rub in the butter with your fingers, as if making a crumble. Mix egg and water and add to flour mixture, kneading it into a dough. Roll the dough out to a thickness of about 10mm. Cut into rectangles, about 8x4 cm. With kitchen scissors, slit each rectangle almost to the top to form 3 strands. Plait the strands, keeping each rectangle flat so that it doesn't stretch, and pinch the plaits together at the ends. Place the plaits on a tray and cover with a sightly damp cloth.
mix together the sugar, water, salt ,ginger and slice of lemon. Bring to boil over medium to high heat, and leave to simmer for about 15 mins, until it forms a syrup. Pour into a large bowl and leave to cool. Refridgerate until cold. Deep fry the Koeksister plaits in hot oil until golden. Inmediately plunge them into the cold syrup. The Koeksisters will absorb the syrup. Leave to dry on a rack.
