Chicken Seekh Kebab

Introduction

This is an all time favourite recipe of mine...

Ingredients

Serves: 4-5

  • 1 kilogram chicken (minced)
  • 2 medium eggs
  • 1 tablespoon ground cumin
  • 1 teaspoon yellow chilli powder
  • 1 teaspoon white pepper
  • 1 pinch of salt
  • 4 teaspoons vegetable oil
  • 4 tablespoons cashew nuts (pounded)
  • 2 tablespoons finely chopped fresh ginger (finely chopped)
  • 4 teaspoons onions (finely chopped)
  • 5 tablespoons fresh coriander (chopped)
  • 1 teaspoon garam masala
  • 1 splash of oil (for basting)
  • butter (for brushing)

Method

  • Whisk the eggs, add cumin powder, yellow chilli powder, white pepper powder, salt, and oil.
  • Add to the mince and mix well. Keep aside for 10 minutes.
  • Add cashew nuts, ginger, onions, green coriander, and garam masala.
  • Mix well. Divide into 10 equal portions.
  • With wet hands, wrap two portions along each skewer. Keep 2 inch between each portion. Prepare 5 skewers like this.
  • Roast in a moderately hot tandoor or charcoal grill for about 6 minutes until golden brown in colour, or roast in a preheated oven at 150°C (300°F) for 8 minutes, basting with oil just once.
  • Remove from skewers and brush with butter.
  • Serve hot, garnished with onion rings and lemon wedges.
  • Additional Information

    Be careful while roasting the chicken. It shouldn't be too roasted or else you will burn it...!
