Ingredients

Serves: 4

Metric Cups
  • 4 red peppers
  • 200 grams halloumi (sliced into 4)
  • ½ red chilli (finely chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • 4 black olives (chopped)
  • 1 tablespoon lemon zest
  • 1 teaspoon chopped chives
  • 4 red bell peppers
  • 7 ounces halloumi (sliced into 4)
  • ½ red chile (finely chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • 4 black olives (chopped)
  • 1 tablespoon lemon zest
  • 1 teaspoon chopped chives

Method

  • Grill or roast the peppers whole until softened. Cut them at the top and bottom, and deseed them. Open out into strips.
  • Place a slice of halloumi in the centre of each pepper strip.
  • Sprinkle over some oregano, chilli, zest, juice and chives, and don't forget to season.
  • Soak four pieces of kitchen string in some water. Then, wrap each pepper into a parcel, securing with the string.
  • Cook the peppers on the BBQ or in the grill for 5 minutes each side until the cheese is starting to melt. Serve hot.
