My take on the French classic, healthy and delicious!

Ingredients

Serves: 8

Metric Cups
  • 2 aubergines
  • 2 courgettes
  • 1 red pepper
  • 1 yellow pepper
  • 8 cherry tomatoes
  • 1 handful basil leaves (fresh)
  • 1 onion (finely chopped)
  • 3 cloves garlic
  • 1 tablespoon vinegar
  • 5 tablespoons olive oil
  • 2 cans chopped tomatoes
  • 1 tablespoon red wine
  • 1 teaspoon sugar
  • 1 tablespoon mixed dried herbs
  • salt (to season)
  • pepper (to season)
  • 15 grams butter
  • Parmesan cheese
  • 2 eggplants
  • 2 zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 8 cherry tomatoes
  • 1 handful basil leaves (fresh)
  • 1 onion (finely chopped)
  • 3 cloves garlic
  • 1 tablespoon vinegar
  • 5 tablespoons olive oil
  • 2 cans diced tomatoes
  • 1 tablespoon red wine
  • 1 teaspoon sugar
  • 1 tablespoon mixed dried herbs
  • salt (to season)
  • pepper (to season)
  • 1 ounce butter
  • Parmesan cheese

Method

  • Chop up all the vegetables any way you like. Add to a deep frying pan with the oil and butter, along with the herbs and seasoning.On a medium heat, melt the butter and mix everything together well.
  • Add the vinegar, sugar and red wine and stir well.
  • Tip into a deep dish and grate some parmesan over the top.
  • Cook in a preheated oven at 190c for 25 - 30 mins. Serve hot.
