Awesome Panzanella (Tuscan Bread Salad)

Drip some water (few tbsp) on toasted bread, squeeze it in, sprinkle with salt. Add to bowl with tomato and juices. Toss dressing together, let onions and tomatoes marinate in dressing for a few minutes. Toss all ingredients together. Garnish with a few shards of fresh parmesan. Serve within ½ hour while some of the bread still crunchy for best texture.

For the the Salad
- 2 slices calabrese round bread (cubed roughly 1)
- 1 red pepper (roasted,or yellow)
- ½ sweet onion (chopped) and roasted)
- ½ gram fennel (chopped) and roasted)
- 6 kalamata olives (pitted and chopped)
- 1 roma tomato (squeezed, diced and reserve juice)
- ¼ litre grapes (or cherry tomatoes, some cut in half)
- 63 millilitres mozzarella (cubed)
- 2 spring onions (chopped)
- 63 millilitres fresh parsley
- fresh oregano (sliced)
- calabrese salami (to taste if desired)
- pepper (lots)
- sundried tomatoes (optional)
For the Dressing
- 1 clove garlic (small, minced)
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- 1 splash of red wine
- 1 splash of balsamic vinegar
- ½ lemon (juiced)
- 63 millilitres olive oil
- 63 millilitres light Italian dressing
