Sumac Spiced Baked Eggs

Introduction
Oh, this is goooood! It's a regular Sunday morning breakfast which is a great filling alternative to the time consuming yet no more delicious full fried breakfast. You do need a pan with a lid that is big enough to crack 4 eggs into the tomatoey mixture - eyeball your pots before you start (mine is 28cm diameter with a glass lid so I can check on the eggies as they cook without removing the lid and letting the steam out)

Ingredients
Serves: 2 hungry people
- 4 large eggs (good quality)
- 1 can tomato
- ¾ teaspoon ground cumin
- ½ teaspoon smoked paprika (good quality)
- ½ teaspoon sumac
- 2 cloves garlic (minced)
- 6 baby potatoes (cut into 1-2cm cubes)
- 3 tablespoons olive oil (if this is brunch I don't feel the least bit guilty about this amount of oil - it's two meals in one after all!)

Additional Information
When making the egg "wells" try and make a solid wall (if you see what I mean) around the hole so that the white doesn't run out over all of the sauce. Not a disaster if it does happen a bit!
