Ingredients

Metric Cups
  • 400 grams lentils (rinsed)
  • 1 onion (chopped)
  • 2 cloves garlic (pressed)
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon cayenne pepper
  • 2 slices wholemeal bread (toasted and blitzed in processer)
  • 2 tablespoons chopped fresh parsley
  • olive oil (for frying)
  • 14⅛ ounces lentils (rinsed)
  • 1 onion (chopped)
  • 2 cloves garlic (pressed)
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon cayenne pepper
  • 2 slices wholemeal bread (toasted and blitzed in processer)
  • 2 tablespoons chopped fresh parsley
  • olive oil (for frying)

Method

  • Fry onion and garlic ten minutes in a little olive oil.
  • Add ½ tsp cumin, ½ teaspoon salt, ½ teaspoon pepper, ¼ teaspoon cayenne.
  • Toast two thick slices seed bread and blitz in processor.
  • Add 400g can lentils, rinsed, to onions in pan. Add bread to pan, cook about 5 minutes. Add 2 tbsp parsley.
  • Return mixture to food processor and blitz till it all comes together. Form 6-7 patties (about 1 ½ tbsp big).
  • Fry in olive oil about 5-6 minutes per side till browned.
