Ingredients

Serves: 6

Metric Cups
  • 300 grams self-raising flour
  • 1 teaspoon salt
  • 50 grams walnuts
  • 1½ millilitres coffee (strong, I used espresso)
  • 1 egg (beaten)
  • 50 grams sugar
  • 200 grams dates (finely chopped)
  • 1 tablespoon sunflower oil
  • 1½ tablespoons flaxseed (for good measure)
  • 11 ounces self-rising flour
  • 1 teaspoon salt
  • 2 ounces walnuts
  • fluid ounce coffee (strong, I used espresso)
  • 1 egg (beaten)
  • 2 ounces sugar
  • 7 ounces dates (finely chopped)
  • 1 tablespoon vegetable oil
  • 1½ tablespoons flaxseed (for good measure)

Method

  • Put flour, salt and sugar in a bowl and mix well. Add walnuts, dates and flaxseed and mix in.
  • Make a well in the middle and add cooled coffee, egg and oil. Stir from the middle outwards until all ingredients are incorporated. Mixture looks rough and dry but it's OK!
  • Put into lined muffin tin and let sit for about 20 minutes.
  • Preheat oven to 200C. Bake 20-25 minutes. Let cool and enjoy! Makes 10-11 muffins.
