  • 250 millilitres water
  • 2 tablespoons light brown muscovado sugar
  • 15 grams fresh yeast
  • 1 pinch of salt
  • 63 millilitres wholewheat flour
  • 188 millilitres wheat flour
  • 8⅘ fluid ounces water
  • 2 tablespoons light brown sugar
  • 1 ounce fresh yeast
  • 1 pinch of salt
  • 2⅕ fluid ounces wholewheat flour
  • 6⅗ fluid ounces wheat flour

Method

  1. In a bowl, smash the yeast and mix it with the sugar. Wait a few minutes until it is completely dissolved. Add the water. Add the salt.
  2. Then start to put the flour on it. The dough will be ready when it stops sticking to your hands.
  3. Take a pinch of the dough, roll it into a tiny ball, put it in a glass of water. When the ball floats to the surface, the dough will be ready for the next step.
  4. Shape it as you want.
  5. Put it into the oven. When it gains color, it should be ready. Enjoy.
