Roughly chop the ginger in a food processor. You need about 3/4 cup (185 ml) of ginger. Chop the apple. Place all in a saucepan with the sugar and water. Bring to a simmer and cook for about 30 - 45 minutes until slightly thickened. Pour into a sterilised jar and seal immediately.
