Mix the dressing ingredients together. Pour over the vegetables to coat (you might not use it all). Put the vegetables in a pretty glass bowl and leave to marinate for at least 3 hours. Decorate with a little more basil. Serves 10 - 12.

For the Raw Vegetables (About 2kg in Total)
- red peppers (sliced)
- yellow peppers (sliced)
- mushrooms (baby or sliced)
- olives (depipped)
- spring onions
- cherry tomatoes (sweet)
- baby sweetcorn
- courgettes (julienned)
- carrots (julienned - I buy these already julienned)
For the Dressing
- 45 millilitres wholegrain mustard
- 10 millilitres garlic (crushed)
- 45 millilitres brown sugar
- 125 millilitres olive oil
- 65 millilitres dry white wine
- 45 millilitres white wine vinegar
- 125 millilitres basil leaves (coarsely chopped)

- 4 fluid ounces olive oil
- 2 fluid ounces dry white wine
- 2 fluid ounces white wine vinegar
- 4 fluid ounces basil leaves (coarsely chopped)
