Chocolate Amaretto Kisses

Beat the egg and ricotta together till smooth, then add the flour, baking powder, cocoa powder, Amaretto, orange zest and sugar together until you have a smooth batter. Warm 2 teaspoons of a flavourless oil in a heavy based frying pan until a cube of bread sizzles. Oil a teaspoon and drop spoonfuls of the batter into the oil, about 4 at a time. As the under side cooks flip over and crisp the other side. Remove onto kitchen paper. Repeat until all the batter is used, then sprinkle with icing sugar and serve.
