Banana-Bread

Introduction

Another in the theory that you can't have too much of a good thing and therefore the world can't have too many banana bread recipes.

Ingredients

Serves: Makes 1 loaf,

For the Bread

  • 9 ounces flour
  • 1 cup wheat bran
  • ⅔ cup superfine sugar
  • ½ teaspoon salt
  • 2½ teaspoons baking powder
  • ⅓ cup melted butter
  • 3 bananas (ripe and mashed)
  • 2 eggs (beaten)
  • ¼ cup milk

For the Optional

  • 1 cup walnuts (pieces)

Method

  • Preheat oven to 350F/180C/Gas Mark 4.
  • Combine the flour, bran, sugar, salt, and baking powder in a bowl.
  • Pour the melted butter over the dry ingredients and quickly stir with a fork.
  • Add the banana, milk, beaten eggs, and walnut pieces and mix until just blended.
  • Pour batter into the prepared pan and bake for 1 hour.
  • Additional Information

    Treat this batter like you would a muffin batter--leave the lumps and do not over-handle the mixture!
