Introduction
This is my mother's recipe for the best lemon squares I have ever tasted. To make things even better, it is extremely fast and simple to bake!

Ingredients
Serves: Makes 16 small squares
- 2 tablespoons lemon juice
- 1 grated lemon peel
- 1 cup flour
- ½ cup butter
- ¼ cup confectioners' sugar
- 2 medium eggs
- 1 cup sugar
- 2 tablespoons flour
- ½ teaspoon baking powder
Method

- Preheat oven to 350°F
- Blend the cup of flour with the butter and confectioners' sugar.
- Press this mixture into the pan and bake for 15 minutes to form the crust.
- Combine remaining ingredients. Spoon lemon mixture into the pan and bake for another 25 minutes at 350F.
- Once baked, sift confectioners' sugar over and cut into squares.
- Serve at room temperature.
