Passionfruit Souffles

Pre-heat the oven to moderate. Grease 4 250mL ramekins with butter and sprinkle the insides with the superfine sugar. Shake out any excess sugar. Whisk yolks, pulp, gran marnier and 2 tbsp of the confectioners' sugar. Beat egg whites until soft peaks form. Gradually add the remaining confectioners' sugar to the egg whites while beating. Fold the egg white mixture into the yolk mixture. Divide evenly between ramekins and bake for 12 minutes. Serve topped with confectioners' sugar and passionfruit pulp if you wish.
Introduction
I made this for the first time when I was about ten or eleven and every one of the numerous times I've made them since they have turned out absolutely perfectly. Very quick and easy to make, and perfect for every occasion.

- 4 egg whites
- 2 tablespoons grand marnier
