Autumn Panini

On a wooden board, assemble all sliced fruits, mixed cheese, and honey. Spread an even layer of cheese on both slices of the bread, and assemble with alternating slices of fruits (dip the fruit slices in lemon juice to keep them from turning brown). Sprinkle a little honey on fruit. Sandwich together. Brush a little melted butter or grape seed oil on both exterior sides of the bread. Press on hot panini grill until cheese is melted and oozing.
Introduction
These sandwiches take advantage of the seasonal fruits available in Autumn.

Ingredients
Serves: 4-6
- 20 thinly sliced fresh figs
- 6 ounces cream cheese (mix of Gorgonzola, goat, mascarpone, and feta)
- 2 thinly sliced pears (ripe)
- 2 thinly sliced apples (ripe)
- 2 tablespoons lemon juice
- ¼ cup honey
- ¼ cup melted butter (or grape seed oil for brushing)
- 1 freshly baked sourdough (or any hard crusted bread)
