Kuku Sabzi (Green Herbs Frittata)

Introduction

It's my kitchen standby because it takes simple ingredients and is quick to make.

Ingredients

Serves: 4-6

  • 8 large chopped finely lettuce
  • 2 cups chopped fresh dill
  • salt (to taste)
  • pepper (to taste)
  • cumin (to taste)
  • 3 large eggs
  • ½ teaspoon baking soda
  • ½ cup red raisins (rinsed)
  • ½ cup chopped walnuts
  • 3 tablespoons vegetable oil

Method

  • Place a large non stick pan on medium heat.
  • Quickly mix all ingredients. Stir well.
  • Pour mixture into pan and cook until edges crisp up, approximately 15 minutes.
  • Gently cut into 4 large slices and flip slowly. Continue cooking the flipped slices of frittata until the other side is crispy, approximately 10 minutes.
  • Additional Information

    Serve with lime wedges and on flat bread.
