Pumpkin Stew

In a large, deep, and heavy bottom pot, fry onions in oil until fragrant and golden around the edges, approximately 10-15 minutes on medium high heat. Stir in pumpkins and split peas. Season with salt, pepper, and turmeric. Add lemon juice, brown sugar, and rose water. Add tomato sauce and hot water. Stir well. Bring to gentle boil and lower heat to bring stew to a gentle simmer. Continue cooking with lid on for 45 minutes. The stew is ready, when thickened and split peas are cooked through.

Serves: 4-6
- 2 medium sugar pumpkins (cut in half and roasted in the oven at 400 degrees Fahrenheit for 45 minutes)
- ¼ cup vegetable oil
- 2 large sliced thinly onions
- salt (to taste)
- pepper (to taste)
- turmeric (to taste)
- 1 large lemon (juice of)
- 1 tablespoon brown sugar
- 1 teaspoon rosewater
- 1 cup split peas
- 2 cups tomato sauce
- 1 cup hot water
